So I decided to spice up dinner yesterday. I had to decide to spice it up three days ago because that’s how long it takes to pickle the lettuce into curtido, the traditional side serving for pupusas. I eagerly watched my lettuce brighten in color, turning hot pink, knowing my pupusa dinner was in the works.
The pupusas themselves were incredibly quick and low maintenance. You basically add water to corn flour, add cheese to a ball of dough, and fry it. Next time, I’m including refried beans.
